How to Eat Low Salt Cheese

Apparently, it's not with english muffins and eggs. 
I found fresh mozzarella at the store. Only 15 mg of salt per "cherry-sized" ball. It's soft, but not soft enough to melt, I guess. At least, not the way the Swiss cheese does. I made Mom her latest-favorite food (half and English muffin with NSA butter, one egg scrambled, and one slice of extra thin sliced Swiss cheese), but substituted the swiss for 3 balls of mozzarella. The result, according to Mom:

Well, it was chewy; like eating rubber. And maybe it's because it was in water or maybe it's me, but it had no flavor. But the muffin and egg...that was good!

Guess we'll be experimenting a bit. Wee.... =P

There was a support group meeting tonight that Mom wanted to attend, but was too sick to leave the house. Maybe next time. There's another one (with a different focus) on Wednesday. We'll see how she feels. I also found her an interim therapist until we can get the local one approved by the insurance. He's about 35 minutes away and isn't familiar with cognitive rehabilitation, but she needs someone to talk to now. When the local doctor is approved, we'll start seeing her, only 15 minutes away and hopeful that she can help Mom regain some of the cognitive function she's lost from HE. I know that she'll feel better when she has more control over her symptoms and capacity.

Meanwhile, my own referral for therapy is stalled once again. Apparently, the one submitted to my imitation Obama-care insurance was inadequate due to its lack of...anything. It gave no reason as to why I would need it. If you're wondering what that reason might be...read the past coupla years of blog entries. And then realize I didn't blog every day, but lived it every day. 

Tomorrow brings more appointments, more phone calls, more cleaning, and more organizing. And some website tutoring. And shopping. And errands. Hopefully posting some stuff online to sell. Probably some cheese-experimentation...I already feel the need for a nap coming on.
